It's a Cupcake Sunday !

Today is sunday
yeah ... nothing special
but to me , it is ..
cuz
i'm not working for once ! wheeeee ^^ ...
and
as promise
i'm back here today with a brand new baking entry !


let's check out what i did in the whole afternoon ..

vanilla buttermilk cupcakes with color frosting

Ingredients

1 1/3 cups all purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
1 cup sugar
¼ cup butter, room temperature
1 large egg
1 teaspoon vanilla powder
¼ tsp vanilla extract
1 cup buttermilk

Preheat oven to 350F.
In a medium bowl, stir together flour, baking soda, baking powder and salt.
In a large bowl , beat the butter and sugar together until it looks creamy. Beat in the egg and the vanilla powder and vanilla extracts until mixture is smooth.
Add half of the flour mixture to the butter mixture and stir until almost combined. Add buttermilk and stir, again, until almost combined. Add the rest of the flour and stir until all ingredients are mixed in.
Divide batter evenly into muffin cups.

Bake for 18-20 minutes at 350F, until a toothpick inserted into the center of a cupcake comes out clean.

after cupcakes well risen and firm to touch
leave on the rack for about 10 mins before frosting .

Bought decorating color icing from cake mate
for my cupcakes topping ..

it's easy and convenient !

oh well , i shouldn't even complain .. be thankful that i'm not slogging today
if not i won't be able to bake and rest lol ..


had wrote a note to remind myself to smile ( big full smile ^^ ) at the mirror everyday
before i start my day !
maybe you can give a try too .. it works =)

My life has become so routine to date
beside working , i dun have time to engage other activities
hence it explains my lack of posting here ..
but i do enjoy what i'm doing
thou i'm stressed & worn out lately
at least i wont turn my mind inwards again ..

i was always told by people that i'm someone very real
reason , not because i'm good at impressing people
guess i'm just way too lousy & lazy to fake it .
i hate to put on a mask .
my emotions literally write straight on my face
hence i had never succeed in anyway to conceal my feelings .

i used to ramble alot
i used to grumble alot
on the contrary it might affect people around me without knowing
i should be prudent to all
but now
i prefer to take it all by myself
maybe i felt that we should always be responsible for our own deeds
there's always a saying : " you reap what you sow ".
and i would like to remind myself constantly .
i felt a complete change in me now
hopefully for the better . ha
hopefully i smile because i smile ^^
alright . another lesson learned!

there are couple of things that i really wish to do right now .

- have a deep and undisturbed long sleep .
- sunbathing at the beach playing my fav numbers from ibiza or carolina to unwind .
- travel alone to a place where i know nobody for month or so
and back with lots of shopping ! .
- last but not least .. baking ! i miss baking the most
baking therapy always works for me !

hope Mr D will find some time & bake up a storm soon =)

For those who's been following my blog all these while
should know beside baking , duncan has a " huge " flair for photography too

few days back my brother was doing some research and looking for inspiration
for his school project near our area .

and i tag along to " disturb" him .. ^^ hehe..
haha .. not really .. i'm actually his chauffeur for the day ..

Our "self entertain " getaway ..

We wanted a short getaway desperately
to get recharged ..
if possible , a rejuvenating one ..
but this time round everything was plan so last min ..
and we landed ourselves in genting .... for 3 days

we all look so shagged ..
took this pic about 6 plus in the morning ...

usually we will run out of time in a trip
but this was so different ..
we were literally bored ..
and no where to go ...
everything was so not right ..
lucky the company was right
and with our cameras around
we can make wonders !

since we were all so bored ..
we decided to have a battle who pose better ! hahah

on a side note:
hasn't been sleeping well for the past few days .
and it affect my productivity and performance at work.
taking it all by yourself is not easy
hope i will be able to get some sleep and soon the dark days will be over..
