As a kid till now i had always been a big fan of potato cakes so I couldn't wait to make it myself .They are simple to make , and the relish adds a really unique & pleasing taste. perfectly for a starter of a meal or ideally for people like me who prefer something light for breakfast or brunch
Ingredients :
potatoes
honey cured ham
eggs
sea / garlic salt
black pepper

Boil the potatoes for 12-15 mins or until tender, then drain and return to the pan over a low heat for 1-2 mins to dry out. Peel the skin thoroughly and add the butter to mash well.
Meanwhile, fried the honey cured ham till light golden brown and cut to strips .
next , beat eggs lightly with black pepper , sea salt , italian seasoning & parsley
Heat a non-stick frying pan, add in some oil, pour in the egg mixture, spread and level it over the frying pan, when the omelette has set, turn over and brown the other side.
season the mash potatoes with salt & pepper and stir until combine . Leave until cool enough to handle, then shape into round cakes. Tip the flour onto a plate, then coat the cakes, tapping off the excess.
Spray a large, non-stick frying pan with oil. Heat over medium heat until hot. Cook potato cakes, in batches, for 5 minutes each side or until golden and warmed through. last but not least topped the cakes with omelette and a strip of honey curb ham to serve .
