Party Party Parties ..



It's been a while since i last hit the club ..
and i really enjoyed my long weekend for once haha..
i know i'm working a little too hard
so , i should at least party hard as well right ? lol ..
yes! ... anyway hope i'm not to late to post these photos up ! :)

Bake that stress away ..


It's now past 12 midnight
and you have no clue how the weekend passed by so quickly
like a gust of wind ..
merely few hours gone and suddenly realize today is already tuesday !
gosh .. i had a real bad day at work again ..
& the stress is seriously killing me ..

baking a cake is my perfect remedy for the monday morning syndrome !


Ingredients

1/2 cup plus 2 tbsp flour
3 tbsp sugar
3 tbsp brown sugar
1/8 tsp salt
5 tbsp chilled butter

cake batter

2 cups raspberries, fresh or frozen (not thawed)
2 cups plus 2 tsp all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2/3 cup sugar
grated zest of half a lemon
3/4 stick (6 tbsp) unsalted butter, at room temperature
2 eggs, room temperature
1 tsp pure vanilla extract
1/2 cup buttermilk

For crumbs topping :

pulse flour, salt and sugars. Cut butter into 1/4-inch cubes and add to the flour mixture. Pulse until the butter is pea-sized and coated with flour. Do not let the dough come together in a ball. Set aside at room temperature.

For cake :

sift all purpose flour and combine baking powder , soda , salt , vanilla extract , buttermillk ..
follow by eggs , butter , sugar , zest of lemon and lastly chopped raspberries

Scrape the batter into the buttered pan/ tin and smooth the top gently with the spatula. Pull the crumb mix from the refrigerator and scatter over the batter.



Bake at 350 F for about 40 minutes, or until the crumbs are golden and thin knife inserted into the center of the cake comes out clean


Transfer the cake to a rack and cool just until it is warm
or until it reaches room temperature.

and i topped the cake with fresh raspberries .. =)

This is another one of those Monday morning cakes that puts a smile on my face. Moist cake batter topped with crispy crumble dough… After tasting this cake, I seriously consider topping every cake with crumble from now on! ha
